This week I have three recipes to share. I just asked my husband for a recipe for Greek Potatoes. he gave recipes for everything we had for dinner tonight.
Greek Potatoes
This week I have three recipes to share. I just asked my husband for a recipe for Greek Potatoes. he gave recipes for everything we had for dinner tonight.
Greek Potatoes
4 Russet potatoes peeled and quartered lengthwise
Olive oil
salt and pepper
2 lemons
2 tablespoons mint leaves chopped
2 Tablespoons oregano
Preheat
oven to 400. In 2 qt. casserole dish sprinkle olive oil on dish, layer
potatoes in dish, sprinkle with olive oil, sprinkle seasonings evenly
over potatoes, squeeze lemon juice over potatoes, place lemon halves on
top of potatoes, cover and bake 30 minutes, remove foil and bake
additional 15 minutes. Serves 4
Garden Chicken Flat bread
4 pieces of flat bread
2 4 oz chicken breasts
Ranch dressing
1 cucumber diced
1 tomato diced
1 red onion Diced
6 oz. Mozzarella cheese
heat
oven to 375, Place flat bread on cookie sheet, Spread on ranch dressing
evenly to taste, add vegetables. Pan sear chicken till done seasoning
with salt and pepper as needed. Cut chicken into small strips and place
on bread. Cover with cheese, bake 15 minutes, serves 4
Lobster Salad
8 oz package imitation lobster meat
2 oz cranberries
2 oz toasted walnuts
1 cucumber sliced
1 tomato wedged
1 red onion sliced
2 oz croutons
8 oz. Salad mix
In large mixing bowl combine and toss all ingredients, serve with favorite dressing. Serves 4.
